Discovery of the Champagne region

Champagne lies between the 48th and 49th parallels north and is the northernmost vineyard in France. As a result, we have a cool climate and less sunshine than the rest of the country.  For a very long time, the grapes had trouble ripening and were harvested before they were really ripe. The grapes were still very acidic and, logically, Champagne wines were also light and lively. Nowadays, Champagne has kept this lightness and its natural acidity accompanies each bubble perfectly.
